In South Florida, particularly in Miami Dade County, the Fats, Oil, and Grease department, or simply known as FOG is one of the strictest county reviews in the country. Whether you are an Existing Facility, New Facility, or received a Violation from Miami Dade County, we can help!

Any commercial facility that handles, prepares or processes food (hot or cold), discharges or has the potential to discharge Fats, Oil, and Grease to the public sanitary sewer system requires a FOG Discharge Control operating permit.

Examples of facilities that require a FOG operating permit include Assisted Living, Bakeries, Banquet Halls, Cafeterias, Catering, Coffee Shops, Convenient Stores, Daycares, Manufacturing, Meat Markets, Restaurants, and Supermarkets. These facilities produce Fats, Oil, and Grease from food preparation, food service and kitchen clean-up. If FOG is not disposed of properly it ends up getting rinsed and poured down the drain, which causes environmental problems such as blocking wastewater flow and clogging sewer pipes.

As part of the FOG Operating permit each facility will be required to install and maintain a properly sized grease trap interceptor with proper maintenance, training of employees, and disposal from a certified liquid waste hauler.

FOG Discharge Control operating permits are renewed annually and are non-transferable. That means each time there is a sale, relocation, or legal transfer of an existing business the applicant must go through a FOG review of the existing system in place. DERM (Department of Environmental Resource Management) requires all existing grease traps meet their latest requirements and be brought up to their 99% efficiency standards for new grease discharge devices.
